Berry Liqueurs
Fruit and berry liqueurs are the most common liqueurs as their process of preparation is quite simple. Berry liqueurs are beverages that are made by adding the adding the extracts of various types of berries to alcoholic drinks to create a more pleasing product. Some liqueurs are made by mixing more than one type of berry but these combined liqueurs never contain more than two types of berries as this could spoil the taste.
Basic Ingredients
A berry liqueur should contain very low amount of alcohol. Normally a berry liqueur consists of vodka or gin as a base and sometimes tequila is used for certain liqueurs. The other main ingredient is berries like raspberries, cherries, blackberries, strawberries, cranberries, gooseberries or plums. Finally granulated sugar is required to sweeten the mixture. You can also use the juice from berries to make your liqueur but using whole berries instead will lend the true flavor to the preparation and an added advantage is that the residual berries can be used to make desserts.
Preparation
To prepare a typical berry liqueur you need about 1lb of ripe berries, 3 cups of vodka and about 1 ¼ cups of granulated sugar. The sugar content in a finished berry liqueur should be in the proportion of 1:3. Put the berries in a container with a lid, add the vodka to it and store the covered mixture in a cool and dark place for 2 to 4 weeks. Stir the mixture once every week. After storing it for the required period strain the mixture through a metal strainer.
Put the liqueur in a glass bottle and add the sugar. Store this bottle for 3 to 4 months again in a cool and dark place. After that period there will be a clear liquid with some sediment at the bottom of the bottle. Pour out the clear liquid carefully into another bottle. As sugar gets converted into glucose or fructose after a period of time your liqueur might lose some of its sweetness. Add some sugar if required. Your berry liqueur is ready.
Storage and Serving
Most liqueurs require long periods of aging to mature properly. Berry liqueurs should ideally be stored in a cool dry place away from sunlight for at least six months to get their maximum taste and best flavors. Berry liqueurs are almost always served chilled. Put some ice cubes in a chilled cocktail glass and pour the liqueur slowly on to the ice cubes. These liqueurs are very refreshing and are best enjoyed in summer.
